Piece of Cake Lafayette changes its economic model to stay open

As Acadiana’s businesses try to survive, some find they need to change their business model, but not reinvent themselves.

Piece of Cake Lafayette bounces back to work and make ends meet.

The bakery is known for its elaborate wedding cakes, bridal cakes, and just about every other creative cake you can think of, including a quarantine-respecting toilet paper cake. With so many celebrations pending, Piece of Cake had to think of something new and fun for customers to keep supporting them.

“You have to be innovative, but we didn’t want to do something we didn’t know,” said Morgan Cerone, owner of Piece of Cake Lafayette.

So, they stayed with the same recipe, but on a smaller bite.

In the first two weeks of the stay-at-home order, business was slow. Now they sell 100 to 150 slices of cake a day, which helps them keep their doors open.

Returning Customer Dai’Shanae Sparrow is a manager of a local business and knows how important it is to buy locally.

“I have to keep rolling the treats even though it’s crazy out there. I have to stay positive and eat these treats,” Sparrow said.

Cerone said, “Thank you for providing us with the sweetness for comfort. We stick to our most popular flavors … Chantilly, fudge, salted caramel. People love to see what we’re up to for the week. next. “

Although Piece of Cake survives, they encountered difficulties along the way. The owner had to lay off two employees and is still waiting for the money she requested through the SBA and other loan programs.

“If we have consistent income over the next few months, we will rehire everyone,” Cerone said. “That’s the goal and the most important thing is that we have to stay local.”

Sparrow said supporting mom-and-pop stores was especially important. “We have to keep the dollars local. The chains can survive on their own, but local businesses are where we have to keep the money.”
